Tomato Coconut Salsa
Your guests will love this Thai twist on chips and salsa. Serve it at an appetizer at your next dinner party or use the salsa as a garnish for chicken or fish. “I created this recipe several years ago when I needed to bring snacks to a potluck, and being who I am, I felt the need to make it at least a little bit Thai,” says Paillin.

Minimalist Pad Thai
“Traditional pad thai is quick to make but tedious to prep for. There are a lot of ingredients, some of which aren’t pantry staples even for Thai people,” says Pailin. Here, Pailin tweaked a classic recipe and made an easier version that might just be better than your local take-out joint.

Chicken Wing Tom Yum Soup
Tom Yum Soup is traditionally made with shrimp, and Pailin has put a twist on it that involves less work (and clean up!). “The chicken version has a simpler, cleaner-tasting broth, and it is one of the most soul-soothing dishes we have to offer,” she says.
